Banana &Date Cake - VIRTUALLY FAT FREE

Nutritional Values: Fat :0.5g* Cals: 228* Cholesterol: 0mg

Ingredients:

1 ½ cups pureed banana - about 3 medium bananas
1 cup dates, chopped
2 1/3 cups Wholemeal SR Flour
1 ½ teaspoon Baking Soda
½ teaspoon Cream of Tartar
1 teaspoon Cinnamon
½ teaspoon Nutmeg
1 ½ cups Honey
1 teaspoon Vanilla Essence
1 cup boiling water
4 Egg Whites

Method:
  1. Preheat the oven to 350F.
  2. Shift together, the flour, half of the baking soda and spices in a large bowl.
  3. In a medium bowl, mix the honey, vanilla and pureed banana.
  4. Stir in the flour mixture just until blended.
  5. In a blender, on high speed, process the water, dates, remaining baking powder soda until dates are pureed.
  6. Stir into the flour mixture.
  7. Beat the egg whites until soft peaks form and fold into the batter. Do not over mix.
  8. Spoon the batter into a largish non-stick baking pan.
  9. Bake for about 30-35 minutes or until the center in is dry.


This will keep in an airtight container. It can be sliced and served cold as a treat with coffee or pre/post exercise. Or as a dessert warmed up in the microwave with a low fat ice-cream, a few strawberries on top, then sprinkle a dash of maple syrup on top and finish with a dusting of caster sugar.
