Angie's Bean & Vegetable Soup

If you want to embark on the Pritikan Diet, here is my recipe for a hearty Bean and Veg soup.

Freezes very well and feeds and army.

Ingredients:

2 medium Brown Onions - Available on line
2 cloves Garlic - crushed - Available on line
5 Roma Tomatoes - chopped coarsely - Available on line
2 cups of Vegetable Stock
400g Borlotti Beans, cooked - Available on line
2 tablespoons fresh Parsley, - Available on line
2 teaspoons Chilli Powder - Available on line
1 tablespoon Mixed Herbs - Available on line
1 cup of the following (or any kind) veggies, presented in bite size portions:
Carrot, Peas, Zucchini, Broccoli, Cauliflower, Potato, Sweet Potato and Corn Kernels

Method:

Heat some stock in a heavy saucepan and cook the onion
