Sweet Snacks - Cherry & Pineapple Topped Orange Cake 'What's the Buzz Day' is Diabetes Australia's-NSW annual fundraising day. It involves the sale of Barnaby Bee merchandise at major retail outlets and selected CBD railway stations.

Monies raised from 'What's the Buzz Day' 2003 will help Diabetes Australia in continuing its vital work in the community assisting all those people living with diabetes.

For more infomation visit: http://www.diabetesnsw.com.au
Ingredients:
  • 125g margarine, polyunsaturated or monounsaturated
  • ½ cup castor sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • Rind and juice of 1 orange- about ¼ cup (see tip 1)
  • Low fat milk (about ¼ cup)
  • 2 cups self raising flour, sifted
  • 1 x 100g packet glace cherries, chopped
  • ½ cup drained unsweetened pineapple pieces (see tip 2)

What to do:
  1. Turn on oven to 180C (350F).
  2. Beat margarine and sugar together in mixing bowl until creamy.
  3. Add eggs 1 at a time, beating well.
  4. Blend in vanilla and orange rind.
  5. Pour orange juice into measuring cup. Add milk to make ½ cup of liquid. Do not worry if the milk seems to separate - it will not effect the cake.
  6. Fold ¼ of the flour into the creamed mixture, followed by ¼ cup of the liquid and repeat.
  7. Then fold in the rest of the flour lightly
  8. Arrange cherries and pineapple pieces in the base of a greased 10 x 20cm loaf tin.
  9. Spoon over the cake mixture. Smooth top with a spatula.
  10. Bake in oven at 180C (350F) for 35 to 40 minutes or until a skewer poked in the center comes out clean and dry.
  11. Turn out onto a wire rack to cool. Serve sliced.

Tips:
  • Tip1: Remove rind from orange by rubbing orange on the fine side of a greater until the orange colour only is removed. Do not great white pith, as this does not taste nice.
  • Tip 2: After removing liquid from pineapple, place pieces on kitchen paper to dry as much as possible.

Serves: Makes 12
