Cherry Cake - FAT FREE

This can be served hot or cold with fresh strawberries and Weight Watchers Vanilla Ice cream.

Ingredients:

  • ¾ cup S.R Flour
  • ½ cup Plain Flour
  • ½ tsp Bicarb Soda
  • 1 tsp Ground Cinnamon
  • 1 tsp Ground Nutmeg
  • ½ cup Brown Sugar - optional
  • ½ cup Orange Juice
  • 2 Egg Whites, lightly beaten - or Egg Replacer
  • 1 cup Skim Milk
  • 410g Can Pitted Cherries - look for the no-added sugar variety
  • 2 Tbs Icing Sugar, for dusting - optional

Method:
  1. Preheat your oven to 160C
  2. Lightly spray a round baking tin with a non-stick cooking spray and line the base with baking paper.
  3. Sift the flours, soda and spices in a large bowl and add the sugar.
  4. In another bowl, combine the eggs, juice, milk and cherries well.
  5. Stir it in the flour mixture and combine it well.
  6. Pour the mix into your cake tin and bake it for about 45 minutes or until it passes the knife in the middle test.
  7. Allow it cool in the tin and then turn it over onto a plate and sprinkle with icing sugar.

TIP: To make a nice pattern with the icing sugar, cover the cake with a paper doley (the ones they serve sandwiches on). Much like a stencil, sprinkle the sugar over it. Lift it off carefully and you are left with a pretty design.
