Chicken Breast with Cheese and Pine Nuts

To Make 4

Ingredients

1 Small Onion, finely chopped - available on line
1 teaspoon garlic, crushed - available on line
1 teaspoon chilli, crushed - available on line
250g low-fat Cottage Cheese
30g Pine Nuts, chopped - available on line
1 tablespoon Lemon Juice - - available on line
4 Skin-Off Chicken Breast Fillets

Method:
  1. Cut a pocket in the side of the chicken breast and set aside in the refrigerator till needed.
  2. Coat a pan with cooking oil spray.
  3. Cook the onion, garlic and chilli until the onion is tender and keep aside.
  4. Add the cottage cheese, nuts and lemon juice and stir until well combined.
  5. Take your prepared chicken and each one with the mixture. Secure the opening with toothpicks.
  6. Coat a clean pan with cooking oil and gently cook the chicken until golden and cooked through. Alternatively you can also:-
  7. Grill on a BBQ or under a hot grill.
  8. Bake in the oven on a bed of crushed tomatoes and shredded basil.
  9. Poach in a steamer on a bed of fresh dill
  10. Serve with a fresh mixed gourmet salad mix and a lovely sweet potato mash.
  11. To make the mash.
  12. Peel the Sweet Potato and cut up into small pieces.
  13. Add then to a pot of boiling water and cook until tender.
  14. Drain the water and return the potato to the pot.
  15. Mash the potato with a masher, until all the lumps are mashed.
  16. Add a little chicken or vegetable stock and stir vigorously with a wooden spoon until it's nice and smooth.
  17. Stir through a sprinkling of in some cumin and mint and serve.
