Healthy Sandwiches; Roast Beef, Satay Chicken & Smoked Salmon
Roast Beef with Tomato Chutney Sandwich
SERVES: 2
cooking spray
½ cup onion sliced
½ cup mushrooms sliced
¼ cup fruit chutney (in jar)
4 slices 9 grain bread or white low GI bread
60g sliced deli roast beef
In a small non-stick frypan that has been generously coated with cooking spray, sauté onion and mushrooms until cooked. Add chutney and combine well. Spread mixture over 2 slices of bread then top with beef. Place remaining bread slices on top.
Satay Chicken Sandwich
SERVES: 2
cooking spray
150g raw skinless chicken breast
1 tablespoon peanut butter
½ teaspoon soy sauce 43% low salt
4 teaspoons 97% fat-free mayonnaise
4 slices 9 grain bread or white low GI bread
? cup carrot grated
1 cup lettuce shredded
In a small non-stick frypan that has been generously coated with cooking spray, fry chicken until cooked, cut into slices. In a small mixing bowl combine peanut butter, soy sauce and mayonnaise together then spread over 2 slices of bread. Top with chicken, carrot and lettuce. Place remaining bread slices on top.
Smoked Salmon Sandwich
SERVES: 2
100g sliced smoked salmon
2 tablespoons Light Philadelphia® cream cheese
12 capers chopped
2 tablespoons salad onion finely diced
¼ cup cucumber small dice
4 slices 9 grain bread or white low GI bread
1 cup lettuce shredded
Cut salmon into small pieces. In a small mixing bowl combine salmon with cream cheese, capers, onion and cucumber, mix well. Place mixture onto 2 slices of bread, top with lettuce and remaining bread slices.
