Pasta Sauces

FAT FREE SAUCES FOR ANY PASTA.

500 g of any pasta is usually enough for two main courses.

1. Eggplant with Mint & Lime Pesto.

Recommended Pasta: Penne

TIP: As well as being fat free, this is a diuretic food. Meaning if you are feeling bloated, gassy and retaining fluid, the mint and parsley will help ease you.

Ingredients:
3 small eggplants, trimmed and chopped into cubes

Mint & Lime Pesto:
1 cup fresh mint, chopped
½ cup continental parsley, chopped
2 cloves garlic, crushed
2 tablespoons lime juice
1 tablespoon Fat Free Italian Dressing
Salt & Pepper to taste

Method:
1. Salt the eggplant well and let it stand for about 30 minutes. Rinse off the salt and drain it well on absorbent paper. (The salt draws out any excess moisture).
2. In a food processor, blend the mint, parsley, garlic, lime juice and salad dressing until smooth. add the salt and pepper here to your liking.
3. Cook your preferred pasta according to the instruction on the packet.
4. Once its cooked, drain it well and then toss it back into the saucepan and add the eggplant to it. Under a medium flame heat the eggplant through the pasta.
5. When you see the eggplant is cooking, add most of the pesto to it (keeping some for the top) and mix it through well.
6. When it's heated through, serve and top with remaining pesto.


2. Tuna & Spring Onion Sauce

Recommended Pasta: Angel Hair.

TIP: If you are a vegetarian, you need some form of protein in your diet and the tuna will help here. You can change the tuna for salmon, prawns, crab, etc.

Ingredients:
½ bunch of rocket, trimmed and chopped
1 large can of tuna in spring water
1 cup of the whites of a spring onion, chopped
¼ cup of 99 % fat free chicken or vegetable stock
2 teaspoons of lime juice
Salt and Pepper to taste.

Method:
1. Cook the pasta according to it's instructions. If using Angel Hair it will only take minutes.
2. When it's cooked drain it well and return it to it's saucepan and add all of the remaining ingredients.
3. Toss it through well while heating it over a medium flame.
4. Serve it up pronto with some grated pepper on top.
