Fuelling kids with healthy and nutritious meals can be a challenge. That's why Coles have devised some delicious family recipes that are healthy for all kids and perfect for fuelling our sporting heroes of the future.
Ingredients
3 You’ll love Coles eggs
1 You’ll love Coles zucchini
1 small You’ll love Coles carrot
½ cup You’ll love Coles grated cheese
Method
1. Whisk three eggs in a bowl.
2. Grate and pat dry one zucchini, one small carrot and ½ cup of grated cheese and add them to the eggs.
3. Spray a small rectangular tin (approximately 15cm x 10cm) with canola oil and pour in the ingredients.
4. Bake in moderate oven for approximately 10 minutes. When cooked, remove from tin, allow to cool and cut into 1cm slices.
5. Perfect for the lunch box.
Make the night before for a quick and easy breakfast, put in lunchboxes with a frozen drink to keep it cool for lunchtime or pack it into the esky with some vegetable sticks and healthy dips such as hommus to enjoy after sport instead of a pie from the canteen.
This recipe provides protein, fibre, vitamins A and C, folate and the minerals calcium and iron, all great for fuelling active, growing kids. Proteins not only provide the body with energy but are also used to form our hair, nails, muscle, brain, skin, tissue and all other cells.
