Give the viral smash taco trend a fresh twist with these Crispy Banh Mi-Inspired Pork Smash Tacos! Quick to make, packed with flavour andperfect for busy weeknights, they're a fun recipe the whole family willlove.

INGREDIENTS
Pork:
500g extra lean pork mince
10 small street taco tortillas
2 garlic cloves, crushed
1 tsp fresh ginger, finely grated
1 tbsp reduced-salt soy sauce
1 tbsp fish sauce
1 tsp honey
½ tsp Chinese five spice
¼ tsp cracked black pepper
Glaze:
1 tbsp reduced-salt soy sauce
1 tbsp sweet chilli sauce
1 tsp honey
Juice of ½ lime
Slaw:
1 x 300g bag finely shredded coleslaw
1 Lebanese cucumber, finely sliced
½ cup coriander leaves
Juice of ½ lime
Yoghurt Drizzle:
¾ cup plain Greek yoghurt
Juice of ½ lime
1 tsp honey
Pinch salt
METHOD
1.Combine the pork mince, garlic, ginger, soy sauce, fish sauce,honey, Chinese five spice and pepper. Divide between 10 tortillasand smash into a thin layer.
2.Mix the glaze ingredients.
3.Heat a non-stick frying pan over medium-high heat and lightly spraywith olive oil. Cook pork-side down for 4-5 minutes until golden andcrispy. Spray the tortilla side with olive oil, flip and cook for 1-2minutes until crisp. Brush with the glaze, flip back pork-side downfor 10 seconds until sticky and glossy, then remove from the pan.
4.Combine the coleslaw, cucumber, coriander and half the lime juice.Mix the yoghurt, remaining lime juice, honey and salt.
5.Top each taco with the slaw, drizzle over the yoghurt sauce andserve with extra coriander and lime wedges.
