Ingredients
Salad
3 small cucumbers, cut in half lengthways and thinly sliced
1 zucchini, grated
½ red bell capsicum, diced
2 tablespoons sesame seeds, roasted
1 teaspoon fresh dill
1 teaspoon salt (optional)
Dressing
2 limes, juiced
1 tablespoon honey
½ teaspoon grated fresh ginger
1 teaspoon salt (optional)
Method
Place sliced cucumber in mixing bowl. Add zucchini, red pepper, sesame seeds, dill and salt
Mix gently to combine
Dressing
Place lime juice, honey, ginger and salt into a sealed container, and shake to combine
Drizzle over the salad and serve immediately
