Spicy Croc Bites & Spanner Crab Wontons

Spicy Croc Bites

Ingredients
250g crocodile meat
1 pkt spring roll skins
Macadamia oil for frying
300g mixed finely sliced vegetables such as cabbage, carrot, onion, green beans, bean sprouts
15g fresh ginger
15g fresh galangal
15g fresh tumeric
15g fresh garlic
1 small onion
2 tablespoons macadamia oil
30g macadamia nuts
1 teaspoon each of paprika, chilli powder, cummin and pepper
Salt to taste
Soy sauce to taste
p can coconut milk

Method

1. Finely blend or grind in a mortar macadamia oil, ginger, galangal, tumeric, garlic, onion and macadamia nuts.

2. Cook over a low flame until aromatic then add spices.

3. Cook for a few more minutes until you have a thick paste then add half a can of coconut cream and half a can of water.

4. Reduce until you have a thick sauce and season with soy, salt and more chilli if you prefer spicy food.

5. Finely slice the crocodile and place in the sauce to cook Saute the vegetables in a separate pan then add to the sauce and crocodile.

6. Heat together for two minutes then take off the stove and place the mixture in the refrigerator to cool. The mixture should be coated with the sauce not soggy and sitting in a puddle of it.

7. When the mixture has cooled separate your spring roll skins.

8. Place the same amount of filling in each and roll into a neat cylinder.

9. Seal the ends with a little paste of flour and water.

10. Allow to rest for one hour then fry until golden brown in macadamia oil.


SPANNER CRAB WONTONS

1 packet of wonton wrappers
200g spanner crab meat
1 small egg
2 spring onions
p cup chopped coriander
1 small clove garlic, crushed
1 small knob ginger, grated
Lightly season with salt and white pepper

Method

1/ Mix all ingredients well then place one teaspoon of the mixture in the centre of each wonton wrapper.

2/ Pinch together to form a small parcel.

3/ Steam or simmer gently in stock or water for 5 minutes or until the filling is firm to the touch.

4/ This is a simple dish accentuating the flavour of the fresh spanner crab.

The classes are now taking place at 10am and 11am each Wednesday in the food and produce precinct of the market.
