Easter Leftover's Rocky Road

Every Easter, our family ends up with an amazing haul of chocolate eggs. Our pantry turns into a chocolate vending machine! My kids would scoff the lot in a week if they could, but I do try and space it out.

At Be A Fun Mum, we like to look for ways we can make the most of leftover food. I know, I know – who would have any leftover chocolate after Easter!? Is that even a thing? We have found that it IS a common problem with parents in the community. And we are often asked what to do with the copious amounts of chocolate in a short period of time!

Of course, just eating it all is a valid option (no judgement), but if you are looking for ways to extend the influx of chocolate into different food options, below are some ways I have used some of that excess chocolate over the years:

As 'choc chips' in muffins
Baked into chocolate brownies
Melted and whizzed up into chocolate and banana milkshakes
Melted over ice-cream
Melted into warm milk to make a hot chocolate
Mixed with melted butter and icing sugar to make chocolate icing for a cake.

When Easter is over, you can also look for chocolate on special at Woolworths and use it in this way too.

A recent Woolworths study found that chocolate is most likely to be leftover at Easter time, followed by meat and then hot cross buns. It also found that nine out of 10 people are choosing to make use of their leftovers, with 60% saying they would consider using leftover chocolate to make rocky road. So, hopefully this Rocky Road Slice recipe will provide you with some post Easter inspiration on how to best use your leftover chocolate! Rocky Road is the easiest treat to make and the recipe is pretty forgiving, as you can add whatever you have in the pantry.

For this Rocky Road recipe, I've measured the ingredients and amount of chocolate eggs needed to get the right chocolate and mix consistency. This recipe is child friendly as it doesn't contain nuts. Instead, we've added pretzels to give it a bit of a salty/crunchy flavour to balance out the sweetness. But it's not just for kids, trust me, adults will love this too!

Ingredients
700gm Milk Chocolate (I used 1 340 Cadbury Pack of 20 Eggs and 2 x 170gm Cadbury Bunnies)
1 Bag of Cadbury Mini Eggs with Sugar Shell
1 Cup of Allens Raspberry Lollies
2 Cups of Marshmallows
1 Cup of Clinkers
1 Cup of Pretzels

1 Cup of Freckles

Method
Unwrap the chocolate eggs and crush into pieces.
Melt the chocolate in the microwave (use a microwave friendly jug) in 20 second bursts. Be sure to mix the chocolate after taking it out of the microwave. I did 2 lots of 20 second bursts for the chocolate to melt. Alternatively, put the broken chocolate into a metal or glass bowl and melt over a saucepan of simmering water, stirring well until melted.
Leave the chocolate to cool slightly, and prepare your 20cm x 20cm baking tray with baking paper.
Add the raspberry lollies, marshmallows, clinkers, pretzels and freckles into the chocolate. Mix gently as you don't want to melt the marshmallows into the chocolate.
Spread the mixture into the pre-prepared tray. Add Cadbury mini eggs on top to decorate.
Keep in the fridge for a few hours or overnight to set.
Take the Rocky Road out of the fridge for half an hour so you can cut into pieces.
