Calamari with lime yoghurt dip and candied chilli macadamias

Ingredients

320g of of calamari tubes, cut on an angle
1 tblsp organic turmeric
1/2 tsp organic cayenne pepper
1 tblsp organic ground cardamom
50ml fish sauce
1 tblsp organic paprika
1 tblsp organic maple syrup
400ml organic sunflower oil
Lime yoghurt:
Juice of 1 organic lime
1 cup Vaalia Low Fat Organic Yoghurt
50ml organic honey
Pinch of sea salt
Candied chilli macadamias:
200g organic brown sugar
1 tblsp organic lime juice
16 roasted organic macadamia nuts
1 organic chilli, seeds removed, finely chopped

Method
1. Place all ingredients (except calamari) in a bowl and whisk together
2. Put calamari into mix and marinate for at least one hour
3. Mix all lime yoghurt ingredients in a bowl to form a smooth paste

Candied chilli macadamias:
1. Place sugar and lime juice in pan and bring to simmer
2. Add macadamia nuts and chilli and take to caramel stage. Remove and place on a tray lined with baking paper
3. To assemble, sear marinated calamari in hot pan until nicely coloured on both sides. Place in centre of plate. Dress with lime yoghurt, and garnish with candied chilli macadamias.
