This Easter, why not fill your goodies hamper with some cranberry chocolate treats that are both delicious and nutritious for all ages.

These cheap, nutritious and satisfying goodies are a great way to celebrate Easter - the chocolate cranberry mousse and chocolate cranberry tarts are a sure way to wow dinner guests when entertaining, and the kids are sure to love the chocolate cranberry muffins.

Happily, cranberries are a great source of antioxidants which helps you and your family stay healthy.

Ingredients

300g Good quality chocolate (should contain 60/70 % cocoa)
2 Eggs
500ml Double cream
50ml Dark rum
4 tablespoons Dried cranberries, chopped
Zest, juice 2 limes

Method
1.Melt the chocolate in a bowl over simmering water, being careful not to over heat.
2.Whisk the eggs in a bowl over boiling water for a few minutes until light and fluffy. In a separate small bowl, lightly whisk the cream.3.Quickly whisk the chocolate into the eggs, and add the rum, lime juice, zest & chopped cranberries.
4.Stir to combine and then fold in the cream. Pour into individual ramekins and place in the refrigerator.
5.Refrigerate until set and serve. Serves 6
