Place the coconut oil in a bowl and microwave for one minute until melted.
Remove bowl and add the milk, lemon juice, lemon zest, maple syrup, vanilla extract, black seeds and almond meal, baking powder and bicarbonate of soda.
Mix well, adding a splash of milk if too dry.
Transfer the mixture between muffin cases in a muffin tin.
Bake in the oven for 15-20 minutes until risen or until an inserted skewer comes out clean.
