Passionfruit Self-Saucing Pudding

Serves: 6-8

Ingredients
1 ½ cups self-raising four (205g)
¼ cup almond meal (25g)
¼ tsp salt
½ cup granulated sugar (100g)
½ cup milk (125ml)
¼ cup butter, melted and cooled (60g)
1 egg, lightly whisked

For sauce
½ cup passionfruit pulp (approx. 7 – 8 fresh passionfruit)
½ cup orange juice (125ml)
1 cup boiling water (250ml)
¼ cup brown sugar, lightly packed (60g)

To serve
Extra passionfruit
Cream, ice cream or custard

Method
Preheat oven to 180°C. Lightly coat a 2 ltr baking dish with cooking oil spray and place on a rimmed oven tray.
Stir four, almond meal, salt and sugar in a medium bowl. Make a well in the centre, add milk, butter, and egg, and stir to combine. Spoon batter into prepared dish and spread into a thin layer.

Stir passionfruit pulp, orange juice, boiling water and brown sugar in a jug. Pour liquid over a large spoon so the liquid foats on top of the batter. Do not stir.
Bake 30 – 35 minutes until pudding is golden on top and firm to the touch in the centre. Serve warm with extra passionfruit, and cream, custard or ice cream if desired.

Australian passionfruit is set for another flush over the cooler months, bringing a fresh taste of summer into your favourite winter meals. The sweet and tangy fruit has a winter peak which sees passionfruit ripe and abundant when the temperature drops. 

Passionfruit grower, Tina Macpherson, says from early June Aussies can expect to see an abundance of fruit in store to enjoy. 

"Following a dry summer, rains in February have seen all the major growing regions enjoying a healthy winter crop that's yielding deliciously plump and juicy fruit," says Tina. 

"After a slower start to the season we're happy to see plenty of fruit on the vines and are excited to supply Aussies with a bit of passion throughout winter." 

Winter is the ideal time of year to add a splash of passionfruit as it contains vitamin C, a known immune booster to help keep your body fighting fit during the cooler months. It's also a good source of gut-loving fibre, while being low in kilojoules. 

To celebrate the bountiful winter crop, Tina has shared her top tips for enjoying Aussie passionfruit: 

Snack happy – Did you know ripe passionfruit can be opened with your bare hands? When passionfruit cravings kick in, simply place the passionfruit between your palms, clasp your fingers together and push your palms towards each other to break the passionfruit skin, then pry it open with your fingers. It's the yummiest on-the-go snack! 
Breakfast boost – Simmer passionfruit pulp and honey in a saucepan for a delicious sauce to top your morning porridge, or pancakes, for a great winter breakfast. 
Warming treats – Passionfruit pairs perfectly with baked goods. Add passionfruit pulp to muffins, sponge cakes and even sweet baked pies for a delicious, tangy flavour. 
Sweet & savoury - Combine fresh passionfruit with soy sauce, finely grated ginger and sugar for a mouth-watering marinade. Pour it over your chosen meat and cook on the BBQ for a sizzling dish that everyone will love.
