Tasmanian Atlantic Salmon Salad Nicoise
Ingredients:

800 grams Tasmanian Atlantic Salmon fillet (cut in to 4cm squares)
200 grams green beans
100 grams black olives
4 boiled eggs (peeled and quartered)
3 ripe tomatoes (cut in to wedges)
500 grams small chat potatoes
8 anchovies halved (optional)
1/2 red onion (sliced finely)
1 cup of flat leaf parsley leaves
1 tablespoon red wine vinegar
2 tablespoons of olive oil


Instructions:

1. In a pot of salted water, boil the potatoes until they are soft throughout. Strain and leave to cool.

2. Boil the green beans for 3-4 minutes and strain with cold water until they are no longer warm to touch.

3. In a hot saucepan, add one tablespoon of olive oil and add the salmon pieces, moving them around. Cook for 3-4 minutes and set aside.

4. Gently combine all ingredients, finishing with the red wine vinegar, olive oil, salt and pepper. 5. Divide over 4 plates.
