To kick off World Diabetes day, Limbs 4 Life is serving up -Toe Jam' – A fruit preserve for feet preservation. Lovingly crushed by Toes, Toe Jam is 100% edible, and made with real fruit.

The aim? Spread awareness of diabetes related amputations. 

While it might not be your usual breakfast order, an estimated 12 Aussies lose a limb every day, mostly feet and toes as a result of diabetes – up to 85% of which are avoidable with the right care.

Toe Jam is bringing this message to the breakfast table to highlight the importance of dedicating time to your tootsies and to help reduce the risk of amputation.

Toe Jam was made with the help, and feet, of Masterchef winner and host of -My Market Kitchen', Emma Dean, who has devised her very own Toe Jam recipe and lovingly crushed more than her fair share of the berries to boot.

Being one of the quirkier dishes she has created, Emma hopes the jam will give Aussies some food for thought. She says: 'My grandmother lost sight due to diabetes related causes, and my grandfather, a limb, so this is a cause close to my heart. I've loved working with Limbs 4 Life to turn one of my biggest passions - food, into something that will drive change. Aussies are known for their adventurous eating habits so I'm hoping they are up for a taste of Toe Jam to help raise awareness of this preventable issue."

For Aussies that are keen change up their brunch game for a good cause, Toe Jam will be on the menu for World Diabetes Day (14 November) at the ever-popular St Ali Café, in Melbourne.

Limbs 4 Life founder Melissa Noonan hopes talking toes, something many people find a little foul, and turning it into something good will get diabetic Aussies, and those around them, to stand up and take check. She says: 'Australia has one of the highest amputation rates in the world – and we hope that Toe Jam, for all its quirks, will get people talking about toes and encourage diabetic Aussies to spread the word about taking good care of your feet.

Limbs 4 Life provides information and support to diabetic Aussies and those around them on simple things they can do as part of their daily regime to reduce the risk of amputation.

So whether you have a foot fetish, or phobia, Limbs 4 Life is encouraging all Aussies to get behind the cause on World Diabetes Day, and have even made the Toe Jam recipe available to the public. Time to get those toes sticky….

Toe Jam

Ingredients
1kg berries
½ cup water
juice of ½ lemon

25g pectin
4 teaspoons stevia, to taste (other artificial sweeteners can also be used)

Method
Place the berries, water and lemon juice into a large saucepan and bring the the boil over a medium heat. Reduce heat and simmer for 15 minutes, stirring often.
Stir in the pectin powder, and bring back to a boil and cook for a further 10 minutes.
Allow to cool to tasting temperature (warm), and add in your stevia and mix well – taste (a little) as you go to ensure you have the desired sweetness.
Pour into sterilized jars and seal.
Store in the fridge and eat it all up within 2 weeks!
Note: When using alternatives to sugar, it is important to add the sweetener AFTER the cooking process, as cooking can make some sweeteners bitter.
