Lamb and Egg Tagine

Eggs are Incredibly Versatile

Ingredients

3 Sunny Queen eggs
800 grams lamb shoulder, diced
2 tablespoons olive oil
1 medium onion, roughly chopped
1 clove garlic, peeled
1 teaspoon paprika
1 teaspoon harissa or chilli paste (optional)
2 teaspoon ground cumin
1 teaspoon ground cinnamon
2-3 cloves
1 tablespoon tomato paste or chopped sundried tomatoes
2 strips orange or mandarin peel
2 carrots, thickly sliced
2 tablespoons sultanas
2 tablespoons parsley, chopped
salt and black pepper


Method

Season lamb and brown in olive oil in a heavy saucepan. Remove to a plate.
In the same pan sauté onion and garlic for 2-3 minutes.
Return the lamb, add spices, chilli, tomato paste, peel, carrots and sultanas and pour in 2 cups water.
Cover and bring to the boil. Reduce heat and simmer gently for 1 hour, uncover and cook a further 1/2 hour, until lamb is tender.
While lamb cooks, hard-boil the eggs by boiling in water for 3-4 minutes. Once done, shell and cut into slices.
Check tagine for seasoning, adding extra salt and pepper if needed. Remove peel strips.
Gently fold in the eggs, and transfer to a serving dish.
Serve with couscous or long grain rice cooked with a pinch of saffron and scattering of parsley.
