Mini Zucchini Frittatas

Eggs for Lunch!

Serves: 6

Ingredients


Olive oil or butter
6 x 15cm squares baking paper
2 medium sized zucchinis
3 spring onions (green shallots), finely chopped
1 cup feta cheese, crumbled
1 teaspoon salt and pepper
black pepper
6 Sunny Queen eggs, lightly beaten
1/3 cup self-raising flour


Method

Preheat the oven to 180°C.
Grease 6 large (1 cup) muffin tins with oil or butter.
Press a square of paper into each tin, folding paper to fit sides and base.
Wipe the zucchinis with a clean cloth and grate into a bowl, discarding ends.
Add the spring onion, feta, salt, a big grind of black pepper, eggs and flour and mix very well. Divide between the muffin tins and place in the oven to bake for about 25-30 minutes or until cooked through. Increase the heat for last 6-7 minutes of cooking to brown tops.
Remove from the oven and let sit in the tin for a few minutes to firm up.

Serve warm or cold, with salad.
