Vanilla Berry Ice Cream
Serves 4

300g low-fat vanilla ice cream, softened
1/2 cup low-fat vanilla custard
100-200g fresh or frozen mixed berries

Method:
Beat ice cream and custard in a large bowl with an electric mixer until combined. Gently fold in berries. Transfer to cake pan or container, cover with plastic wrap, then foil, and freeze until firm.
