Ocean Trout Santorini

Ingredients

6 ocean trout filets (100 gm each)
6 shallots, sliced
3 large juicy tomatoes, grated
4 125 g kalamata olives
2 cloves of garlic, peeled and diced
3 sprigs fresh oregano leaves, taken off the stalk, chopped
75ml Ouzo
60ml Olive Oil
Salt & Freshly Ground Pepper
½ tsp MasterFoods Chilli Flakes (optional)

Method
1. Debone the ocean trout.
2. Over a high heat, heat olive oil in a large sauté pan.
3. Add the trout and cook for 1 minute. TURN.
4. Add the shallots and garlic and sweat for 1-2 minutes. (Add chilli flakes if using).
5. Add the Ouzo, tip the pan towards the flame and flambé. (NB. Hold your arm out straight and don’t look over the pan!).
6. When flames have died down, add the grated tomatoes, the oregano and kalamata olives and lower the heat to medium.
7. Season with salt and pepper and cook till warmed through. You can also put the dish into a 200 degree oven for 5 minutes.
8. Taste and season with more salt and pepper if necessary. Place trout onto a platter and drizzle sauce over the top and garnish.
